It’s The Most Wonderful Time Of The Year!

I LOVE this time of year! A chance to bake with all the ingredients you can’t find at any other time….pumpkin, cider, eggnog…just to name a few. It’s amazing what you can make with these ingredients, which to me are not appealing at all by themselves. But add them to some of your favorite baked goods and YUM! It’s a whole new ballgame!

I recently shared a recipe for Pumpkin Patch Pancakes with a kindergarten class as they were learning about the letter “P”….Pumpkin Patch Pancakes, get it? The teacher incorporated this into her lesson plans and the children prepared the pancakes for their snack one afternoon. I have heard so many stories about what a hit these pancakes were and the children even opted to have them as a snack alternative for their class Halloween party.

Here is the recipe and it is very simple, so I hope you give it a try. I am also including the recipe for Apple Cider Syrup to go along with it. Both of these recipes came from an amazing blogger, Tina at Mommy’s Kitchen.

Pumpkin Patch Pancakes
favorite pancake mix
1/4 C. canned pumpkin
1/4 C. brown sugar
1/2 tsp. vanilla extract
1/2 tsp. pumpkin pie spice

Mix up your favorite pancake mix according to package directions. For every 1 cup of dry mix used, mix in the above amounts of pumpkin, brown sugar, vanilla and spice. Cook your pancakes in a hot skillet or griddle. Watch closely when you start to see bubbles flip pancake to the other side.

Apple Cider Syrup
1 C. sugar
3 Tbsp. cornstarch
1 tsp. pumpkin pie spice
4 C. apple juice or apple cider

In a sauce pan mix together, sugar, cornstarch, and pumpkin spice. Stir in apple juice or apple cider. Bring to a boil, remembering to stir occasionally. Boil until desired thickness. Remove from heat and serve over Pumpkin Patch Pancakes.

I hope that in the up and coming days you get a chance to get to the local grocery store and pick up a few of the “seasonal” items and fire up that oven and get baking! I know visions of muffins, cookies, cakes, and candies (just to name a few) are dancing in my head. I hope they will be dancing in yours as well!
